Ingredients

  • Pasta (spaghetti or penne) - 150 grams
  • Feta cheese - 100 grams, crumbled
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red onion - 1 small, finely chopped
  • Black olives - 50 grams, pitted and sliced
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the red onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften.
  4. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  5. Add the cooked pasta to the skillet, along with the crumbled feta, sliced olives, lemon juice, dried oregano, salt, and black pepper. Toss everything together over medium heat for 2-3 minutes to combine well.
  6. Remove from heat and garnish with fresh parsley before serving.
