- Pasta (spaghetti or penne) - 150 grams
- Feta cheese - 100 grams, crumbled
- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams, fresh
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red onion - 1 small, finely chopped
- Black olives - 50 grams, pitted and sliced
- Lemon juice - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the red onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Add the cooked pasta to the skillet, along with the crumbled feta, sliced olives, lemon juice, dried oregano, salt, and black pepper. Toss everything together over medium heat for 2-3 minutes to combine well.
- Remove from heat and garnish with fresh parsley before serving.
