- Whole grain pasta - 150 grams
- Fennel bulb - 1 medium (about 200 grams)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Vegetable broth - 250 ml
- Lemon juice - 1 tablespoon
- Fresh dill - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a pot of salted water to a boil and cook the whole grain pasta according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
- While the pasta cooks, slice the fennel bulb thinly, including the fronds for garnish.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced fennel to the pan and cook for 5-7 minutes, stirring occasionally, until it becomes tender.
- Pour in the vegetable broth and bring to a simmer. Allow it to reduce slightly for about 3-4 minutes.
- Add the cooked pasta to the pan along with lemon juice, fresh dill, and a splash of reserved pasta water. Toss everything together until well combined, and season with salt and black pepper to taste.
- Serve hot, garnished with grated Parmesan cheese and additional dill fronds if desired.
