Ingredients

  • Whole grain pasta - 150 grams
  • Fennel bulb - 1 medium (about 200 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Vegetable broth - 250 ml
  • Lemon juice - 1 tablespoon
  • Fresh dill - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Bring a pot of salted water to a boil and cook the whole grain pasta according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
  2. While the pasta cooks, slice the fennel bulb thinly, including the fronds for garnish.
  3. In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the sliced fennel to the pan and cook for 5-7 minutes, stirring occasionally, until it becomes tender.
  5. Pour in the vegetable broth and bring to a simmer. Allow it to reduce slightly for about 3-4 minutes.
  6. Add the cooked pasta to the pan along with lemon juice, fresh dill, and a splash of reserved pasta water. Toss everything together until well combined, and season with salt and black pepper to taste.
  7. Serve hot, garnished with grated Parmesan cheese and additional dill fronds if desired.
