Ingredients

  • Fava beans - 200 grams, shelled
  • Pasta (orzo or small pasta) - 150 grams
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Fresh dill - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 30 grams, grated

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a separate pan, heat the olive oil over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant but not browned.
  3. Add the shelled fava beans to the pan and cook for 5-7 minutes, stirring occasionally, until they are tender.
  4. Add the cooked pasta to the fava beans along with the reserved pasta water and lemon juice. Toss everything together over low heat for 2-3 minutes until combined.
  5. Stir in the fresh dill, and season with salt and black pepper to taste.
  6. Serve warm, garnished with grated Parmesan cheese if desired.
