- Whole wheat pasta - 100 grams
- Couscous - 50 grams
- Cherry tomatoes - 150 grams, halved
- Cucumber - 100 grams, diced
- Feta cheese - 50 grams, crumbled
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Garlic - 1 clove, minced
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente, usually about 8-10 minutes.
- In a separate pot, bring 200 ml of water to a boil. Add the couscous, remove from heat, cover, and let it sit for about 5 minutes until the water is absorbed.
- While the pasta and couscous are cooking, prepare the dressing by whisking together olive oil, lemon juice, minced garlic, salt, and black pepper in a bowl.
- Once the pasta is cooked, drain it and rinse under cold water to stop the cooking process. Fluff the couscous with a fork.
- In a large bowl, combine the cooked pasta, couscous, cherry tomatoes, cucumber, and crumbled feta cheese.
- Pour the dressing over the salad and toss gently to combine. Add fresh parsley and mix again.
- Serve immediately or refrigerate for up to 30 minutes for a chilled dish.
