Ingredients

  • Whole wheat pasta - 100 grams
  • Couscous - 50 grams
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 100 grams, diced
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. In a separate pot, bring 200 ml of water to a boil. Add the couscous, remove from heat, cover, and let it sit for about 5 minutes until the water is absorbed.
  3. While the pasta and couscous are cooking, prepare the dressing by whisking together olive oil, lemon juice, minced garlic, salt, and black pepper in a bowl.
  4. Once the pasta is cooked, drain it and rinse under cold water to stop the cooking process. Fluff the couscous with a fork.
  5. In a large bowl, combine the cooked pasta, couscous, cherry tomatoes, cucumber, and crumbled feta cheese.
  6. Pour the dressing over the salad and toss gently to combine. Add fresh parsley and mix again.
  7. Serve immediately or refrigerate for up to 30 minutes for a chilled dish.
