Ingredients
- Whole wheat pasta - 150 grams
- Chicken breast - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Cucumber - 1 medium, diced
- Kalamata olives - 50 grams, pitted and sliced
- Feta cheese - 50 grams, crumbled
- Lemon juice - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- While the pasta is cooking, season the chicken breast with salt, pepper, and dried oregano.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken breast and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let it rest for a few minutes, then slice into strips.
- In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant.
- Add the cherry tomatoes and cucumber to the skillet, cooking for 3-4 minutes until the tomatoes start to soften.
- In a large bowl, combine the cooked pasta, sautéed vegetables, sliced chicken, Kalamata olives, crumbled feta cheese, and lemon juice. Toss gently to combine.
- Season with additional salt and pepper as desired, and garnish with fresh parsley before serving.
