Pasta with Chicken

Ingredients

  • Whole wheat pasta - 150 grams
  • Chicken breast - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 medium, diced
  • Kalamata olives - 50 grams, pitted and sliced
  • Feta cheese - 50 grams, crumbled
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, season the chicken breast with salt, pepper, and dried oregano.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken breast and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let it rest for a few minutes, then slice into strips.
  4. In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant.
  5. Add the cherry tomatoes and cucumber to the skillet, cooking for 3-4 minutes until the tomatoes start to soften.
  6. In a large bowl, combine the cooked pasta, sautéed vegetables, sliced chicken, Kalamata olives, crumbled feta cheese, and lemon juice. Toss gently to combine.
  7. Season with additional salt and pepper as desired, and garnish with fresh parsley before serving.
