Ingredients

  • Whole grain pasta - 150 grams
  • Feta cheese - 100 grams, crumbled
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  4. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest. Add the drained pasta to the skillet with the vegetables.
  6. Add the crumbled feta cheese, oregano, and reserved pasta water to the skillet. Toss everything together until well combined. Season with salt and black pepper to taste.
  7. Serve immediately, garnished with extra feta and a drizzle of olive oil if desired.
