Ingredients
- Whole grain pasta - 150 grams
- Feta cheese - 100 grams, crumbled
- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams, fresh
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Oregano - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest. Add the drained pasta to the skillet with the vegetables.
- Add the crumbled feta cheese, oregano, and reserved pasta water to the skillet. Toss everything together until well combined. Season with salt and black pepper to taste.
- Serve immediately, garnished with extra feta and a drizzle of olive oil if desired.
