Ingredients
- Pasta (whole wheat) - 150 grams
- Cauliflower - 200 grams, cut into florets
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Red pepper flakes - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- While the pasta is cooking, place the cauliflower florets on a baking sheet. Drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Toss to coat and roast in the oven for 20 minutes, or until golden and tender.
- In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
- Add the roasted cauliflower to the skillet and stir to combine. Pour in the lemon juice and reserved pasta water, mixing to create a light sauce.
- Add the cooked pasta to the skillet and toss everything together until well combined. Adjust seasoning with salt and pepper as needed.
- Serve the pasta warm, topped with crumbled feta cheese and chopped parsley.
