Ingredients

  • Pasta (whole wheat) - 150 grams
  • Cauliflower - 200 grams, cut into florets
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Red pepper flakes - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  3. While the pasta is cooking, place the cauliflower florets on a baking sheet. Drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Toss to coat and roast in the oven for 20 minutes, or until golden and tender.
  4. In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  5. Add the roasted cauliflower to the skillet and stir to combine. Pour in the lemon juice and reserved pasta water, mixing to create a light sauce.
  6. Add the cooked pasta to the skillet and toss everything together until well combined. Adjust seasoning with salt and pepper as needed.
  7. Serve the pasta warm, topped with crumbled feta cheese and chopped parsley.
