Ingredients

  • Pasta (spaghetti or penne) - 200 grams
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Capers - 2 tablespoons, rinsed and drained
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Feta cheese (optional) - 50 grams, crumbled

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  4. Add halved cherry tomatoes and cook for about 5 minutes, stirring occasionally, until they start to soften.
  5. Stir in the capers and cook for an additional 2 minutes.
  6. Once the pasta is cooked, reserve a cup of pasta water and then drain the pasta.
  7. Add the drained pasta to the skillet with the tomato and caper mixture.
  8. Mix well, adding reserved pasta water a little at a time until the desired sauce consistency is reached.
  9. Remove from heat and stir in chopped parsley, lemon juice, salt, and black pepper to taste.
  10. Serve topped with crumbled feta cheese, if desired.
