Ingredients
- Pasta (spaghetti or penne) - 200 grams
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Capers - 2 tablespoons, rinsed and drained
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Feta cheese (optional) - 50 grams, crumbled
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add halved cherry tomatoes and cook for about 5 minutes, stirring occasionally, until they start to soften.
- Stir in the capers and cook for an additional 2 minutes.
- Once the pasta is cooked, reserve a cup of pasta water and then drain the pasta.
- Add the drained pasta to the skillet with the tomato and caper mixture.
- Mix well, adding reserved pasta water a little at a time until the desired sauce consistency is reached.
- Remove from heat and stir in chopped parsley, lemon juice, salt, and black pepper to taste.
- Serve topped with crumbled feta cheese, if desired.
