  • Green cabbage - 200 grams, shredded
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Carrot - 1 medium, grated
  • Vegetable broth - 200 ml
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Lemon juice - 1 tablespoon
  • Feta cheese - 50 grams, crumbled (optional)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and grated carrot to the skillet, stirring for another minute until fragrant.
  4. Stir in the shredded cabbage and cook for about 5-7 minutes, until it wilts down, stirring occasionally.
  5. Pour in the vegetable broth, season with salt, black pepper, and red pepper flakes (if using), and cook until the cabbage is tender, about 5 more minutes.
  6. Add the cooked pasta to the skillet and toss to combine with the cabbage mixture. Drizzle with lemon juice and mix well.
  7. Serve hot, garnished with crumbled feta cheese and fresh parsley.
