- Onion - 1 medium, chopped
- Carrot - 1 medium, grated
- Vegetable broth - 200 ml
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
- Lemon juice - 1 tablespoon
- Feta cheese - 50 grams, crumbled (optional)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and grated carrot to the skillet, stirring for another minute until fragrant.
- Stir in the shredded cabbage and cook for about 5-7 minutes, until it wilts down, stirring occasionally.
- Pour in the vegetable broth, season with salt, black pepper, and red pepper flakes (if using), and cook until the cabbage is tender, about 5 more minutes.
- Add the cooked pasta to the skillet and toss to combine with the cabbage mixture. Drizzle with lemon juice and mix well.
- Serve hot, garnished with crumbled feta cheese and fresh parsley.
