Ingredients

  • Whole grain pasta - 150 grams
  • Bulgur wheat - 50 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Feta cheese - 50 grams, crumbled
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a medium pot, bring salted water to a boil and cook the whole grain pasta according to package instructions until al dente. Drain and set aside.
  2. In another pot, bring 1 cup of water to a boil, add bulgur wheat, cover, and let it simmer for about 12-15 minutes or until the water is absorbed. Fluff with a fork and set aside.
  3. In a large skillet, heat olive oil over medium heat and add minced garlic. Sauté for about 1 minute until fragrant.
  4. Add the halved cherry tomatoes and cook for 3-4 minutes until they start to soften.
  5. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  6. Combine the cooked pasta and bulgur with the sautéed vegetables in the skillet. Mix well.
  7. Add lemon juice, salt, and black pepper to taste, and toss everything together.
  8. Serve warm, topped with crumbled feta cheese and chopped parsley.
