Ingredients
- Whole grain pasta - 150 grams
- Bulgur wheat - 50 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams, fresh
- Feta cheese - 50 grams, crumbled
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a medium pot, bring salted water to a boil and cook the whole grain pasta according to package instructions until al dente. Drain and set aside.
- In another pot, bring 1 cup of water to a boil, add bulgur wheat, cover, and let it simmer for about 12-15 minutes or until the water is absorbed. Fluff with a fork and set aside.
- In a large skillet, heat olive oil over medium heat and add minced garlic. Sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes and cook for 3-4 minutes until they start to soften.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Combine the cooked pasta and bulgur with the sautéed vegetables in the skillet. Mix well.
- Add lemon juice, salt, and black pepper to taste, and toss everything together.
- Serve warm, topped with crumbled feta cheese and chopped parsley.
