Ingredients

  • Pasta (whole wheat) - 150 grams
  • Broccoli - 200 grams, cut into florets
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Feta cheese - 50 grams, crumbled
  • Red pepper flakes - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Bring a large pot of salted water to a boil and add the pasta. Cook according to the package instructions until al dente, about 8-10 minutes.
  2. In the last 3 minutes of pasta cooking time, add the broccoli florets to the pot.
  3. While the pasta and broccoli are cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant, about 1 minute.
  4. Drain the pasta and broccoli, reserving a cup of the pasta water. Add them to the skillet with the garlic oil.
  5. Toss everything together, adding lemon juice, and if needed, a little reserved pasta water to help combine. Season with salt and black pepper to taste.
  6. Remove from heat and gently fold in the crumbled feta cheese and chopped parsley.
  7. Serve immediately, garnished with extra parsley and feta if desired.
