Ingredients

  • Whole grain pasta - 200 grams
  • Beets (cooked and diced) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Fresh dill (chopped) - 2 tablespoons
  • Feta cheese (crumbled) - 50 grams
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the whole grain pasta according to package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a skillet over medium heat and add minced garlic, sautéing until fragrant (about 1 minute).
  3. Add the diced cooked beets to the skillet, stirring gently to combine, and cook for an additional 5 minutes until heated through.
  4. Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
  5. Add the drained pasta to the skillet with the beets and garlic, along with the fresh dill, lemon juice, and reserved pasta water. Toss until well combined.
