Ingredients

  • Whole grain pasta - 150 grams
  • Beef strips (lean) - 200 grams
  • Olive oil - 2 tablespoons
  • Red onion - 1 medium, sliced
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Oregano (dried) - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Greek yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Cook the whole grain pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced red onion and sauté for 2-3 minutes until softened.
  3. Add the beef strips to the skillet and cook for about 5-7 minutes until browned and cooked through. Season with salt, black pepper, and dried oregano.
  4. Stir in the minced garlic, sliced bell pepper, and zucchini. Cook for another 5 minutes until the vegetables are tender.
  5. Add the cherry tomatoes to the skillet and cook for 2 minutes until they start to soften.
  6. In a small bowl, mix the Greek yogurt with lemon juice and a pinch of salt. Set aside.
  7. Combine the cooked pasta with the beef and vegetable mixture, tossing everything together until well mixed.
  8. Serve hot, drizzled with the Greek yogurt sauce and garnished with fresh parsley.
