- Whole grain pasta - 150 grams
- Beef strips (lean) - 200 grams
- Olive oil - 2 tablespoons
- Red onion - 1 medium, sliced
- Bell pepper (red or yellow) - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Oregano (dried) - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Greek yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Cook the whole grain pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced red onion and sauté for 2-3 minutes until softened.
- Add the beef strips to the skillet and cook for about 5-7 minutes until browned and cooked through. Season with salt, black pepper, and dried oregano.
- Stir in the minced garlic, sliced bell pepper, and zucchini. Cook for another 5 minutes until the vegetables are tender.
- Add the cherry tomatoes to the skillet and cook for 2 minutes until they start to soften.
- In a small bowl, mix the Greek yogurt with lemon juice and a pinch of salt. Set aside.
- Combine the cooked pasta with the beef and vegetable mixture, tossing everything together until well mixed.
- Serve hot, drizzled with the Greek yogurt sauce and garnished with fresh parsley.
