Ingredients

  • Whole wheat pasta - 150 grams
  • Fresh basil leaves - 50 grams
  • Cherry tomatoes - 200 grams
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Feta cheese - 50 grams, crumbled
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet, sautéing for about 1 minute until fragrant but not browned.
  4. Halve the cherry tomatoes and add them to the skillet, cooking for about 3-4 minutes until they start to soften.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the tomatoes and garlic.
  6. Toss everything together, adding in the fresh basil leaves, lemon juice, and crumbled feta cheese.
  7. If the pasta seems dry, add a little reserved pasta water until you reach desired consistency.
  8. Season with salt and black pepper to taste, and serve warm.
