Ingredients
- Whole wheat pasta - 150 grams
- Fresh asparagus - 200 grams
- Extra virgin olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Feta cheese - 50 grams, crumbled
- Fresh dill - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente.
- While the pasta cooks, trim the woody ends off the asparagus and cut them into 2-inch pieces.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the asparagus pieces to the skillet and cook for about 4-5 minutes, stirring occasionally, until they are tender but still crisp.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the asparagus.
- Pour in the lemon juice and add the reserved pasta water as needed to create a light sauce. Toss everything together until well combined.
- Remove from heat and stir in the crumbled feta cheese and chopped dill. Season with salt and black pepper to taste.
- Serve immediately, garnished with extra dill if desired.
