Ingredients

  • Whole wheat pasta - 150 grams
  • Fresh asparagus - 200 grams
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Feta cheese - 50 grams, crumbled
  • Fresh dill - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente.
  2. While the pasta cooks, trim the woody ends off the asparagus and cut them into 2-inch pieces.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the asparagus pieces to the skillet and cook for about 4-5 minutes, stirring occasionally, until they are tender but still crisp.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it to the skillet with the asparagus.
  6. Pour in the lemon juice and add the reserved pasta water as needed to create a light sauce. Toss everything together until well combined.
  7. Remove from heat and stir in the crumbled feta cheese and chopped dill. Season with salt and black pepper to taste.
  8. Serve immediately, garnished with extra dill if desired.
