- Pasta (spaghetti or penne) - 150 grams
- Fresh arugula - 100 grams
- Feta cheese - 75 grams, crumbled
- Cherry tomatoes - 150 grams, halved
- Garlic - 2 cloves, minced
- Olive oil - 30 ml
- Lemon juice - 15 ml
- Salt - to taste
- Black pepper - to taste
- Fresh basil leaves - a handful, for garnish
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they soften slightly.
- Stir in the cooked pasta and arugula, mixing until the arugula wilts.
- Add reserved pasta water a little at a time to create a light sauce, then stir in the lemon juice, salt, and black pepper to taste.
- Remove from heat and gently fold in the crumbled feta cheese.
- Serve immediately, garnished with fresh basil leaves.
