Ingredients

  • Pasta (spaghetti or penne) - 150 grams
  • Fresh arugula - 100 grams
  • Feta cheese - 75 grams, crumbled
  • Cherry tomatoes - 150 grams, halved
  • Garlic - 2 cloves, minced
  • Olive oil - 30 ml
  • Lemon juice - 15 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil leaves - a handful, for garnish

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they soften slightly.
  4. Stir in the cooked pasta and arugula, mixing until the arugula wilts.
  5. Add reserved pasta water a little at a time to create a light sauce, then stir in the lemon juice, salt, and black pepper to taste.
  6. Remove from heat and gently fold in the crumbled feta cheese.
  7. Serve immediately, garnished with fresh basil leaves.
