Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Canned artichoke hearts - 200 grams, drained and halved
  • Olive oil - 4 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 100 grams, crumbled
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
  3. Add the drained artichoke hearts to the skillet and cook for 3-4 minutes, gently stirring to combine with the garlic and olive oil.
  4. Stir in the cooked pasta, lemon juice, and reserved pasta water to create a light sauce. Toss everything together until evenly coated.
  5. Season with salt, black pepper, and red pepper flakes (if using). Cook for an additional 2 minutes to heat through.
  6. Remove from heat and stir in the chopped parsley and crumbled feta cheese. Serve immediately, garnished with extra parsley and feta if desired.
