Ingredients

  • Whole wheat pasta - 160 grams
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Anchovy fillets - 4 pieces, chopped
  • Cherry tomatoes - 200 grams, halved
  • Kalamata olives - 50 grams, pitted and sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the whole wheat pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped anchovy fillets to the skillet, stirring until they dissolve into the oil, about 2 minutes.
  4. Stir in the halved cherry tomatoes and cook for another 3-4 minutes until they start to soften.
  5. Add the cooked pasta to the skillet, along with the sliced Kalamata olives, red pepper flakes, salt, and black pepper. Toss everything together over low heat for about 2 minutes.
  6. Remove from heat and stir in the chopped parsley and lemon juice before serving.
