Ingredients

  • All-purpose flour - 150 grams
  • Powdered sugar - 50 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Coconut oil - 75 grams (melted)
  • Almond milk - 50 ml
  • Fruit jam (apricot or cherry) - 150 grams
  • Ground almonds - 25 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the all-purpose flour, powdered sugar, baking powder, and salt.
  3. Add the melted coconut oil and almond milk to the dry ingredients, mixing until a dough forms. It should be slightly sticky but manageable.
  4. Divide the dough into two parts, with one part being slightly larger than the other. Wrap both parts in plastic wrap and refrigerate for about 15 minutes.
  5. Once chilled, take the larger portion of the dough and roll it out on a floured surface to fit a 20 cm tart pan, ensuring it covers the bottom and sides.
  6. Spread the fruit jam evenly over the base of the pastry.
  7. Roll out the smaller portion of the dough and cut it into strips to create a lattice pattern over the jam filling.
  8. Sprinkle the ground almonds over the jam before placing the lattice on top.
  9. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
  10. Allow to cool for at least 10 minutes before slicing and serving.
