Ingredients

  • Pizza dough - 200 grams
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 100 grams, diced
  • Red onion - 50 grams, thinly sliced
  • Kalamata olives - 50 grams, pitted and halved
  • Feta cheese - 75 grams, crumbled
  • Fresh basil - a handful, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  3. Transfer the rolled dough to a baking sheet lined with parchment paper.
  4. Brush the dough with olive oil and sprinkle with salt and black pepper.
  5. Bake the pizza crust in the preheated oven for 10-12 minutes, or until golden brown.
  6. In a mixing bowl, combine the halved cherry tomatoes, diced cucumber, sliced red onion, Kalamata olives, crumbled feta cheese, chopped basil, dried oregano, salt, and pepper. Toss gently to combine.
  7. Once the pizza crust is done baking, remove it from the oven and let it cool for a couple of minutes.
  8. Top the warm pizza crust with the panzanella salad mixture, spreading it evenly across the surface.
  9. Drizzle with a little more olive oil if desired, and serve immediately.
