- Pizza dough - 200 grams
- Olive oil - 2 tablespoons
- Cherry tomatoes - 150 grams, halved
- Cucumber - 100 grams, diced
- Red onion - 50 grams, thinly sliced
- Kalamata olives - 50 grams, pitted and halved
- Feta cheese - 75 grams, crumbled
- Fresh basil - a handful, chopped
- Oregano - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled dough to a baking sheet lined with parchment paper.
- Brush the dough with olive oil and sprinkle with salt and black pepper.
- Bake the pizza crust in the preheated oven for 10-12 minutes, or until golden brown.
- In a mixing bowl, combine the halved cherry tomatoes, diced cucumber, sliced red onion, Kalamata olives, crumbled feta cheese, chopped basil, dried oregano, salt, and pepper. Toss gently to combine.
- Once the pizza crust is done baking, remove it from the oven and let it cool for a couple of minutes.
- Top the warm pizza crust with the panzanella salad mixture, spreading it evenly across the surface.
- Drizzle with a little more olive oil if desired, and serve immediately.
