This dish features grilled chicken patties topped with a colorful medley of vegetables and a tangy vinaigrette, served on grilled eggplant slices instead of bread.

Ingredients
- Ground chicken - 300 grams
- Zucchini - 100 grams, grated
- Red onion - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Egg - 1, beaten
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Eggplant - 1 medium, sliced into 1 cm rounds
- Cherry tomatoes - 100 grams, halved
- Cucumber - 100 grams, diced
- Basil leaves - 10 grams, torn
- Red wine vinegar - 1 tablespoon
Steps
- Preheat the grill to medium-high heat.
- In a mixing bowl, combine ground chicken, grated zucchini, red onion, minced garlic, beaten egg, oregano, salt, and pepper. Mix until well combined.
- Form the mixture into 2 equal patties.
- Brush eggplant slices with 1 tablespoon of olive oil and season with salt and pepper. Grill the eggplant for about 3-4 minutes per side, or until tender and grill marks appear. Set aside.
- In a separate bowl, combine cherry tomatoes, cucumber, torn basil, red wine vinegar, and the remaining tablespoon of olive oil. Toss to combine and season with salt and pepper to taste.
- Grill the chicken patties for about 5-6 minutes per side, or until fully cooked and internal temperature reaches 75°C.
- To assemble, place a grilled chicken patty on a grilled eggplant slice, top with the panzanella salad mixture, and finish with another eggplant slice on top.
- Serve immediately and enjoy your Panzanella Burger!
