This dish features grilled chicken patties topped with a colorful medley of vegetables and a tangy vinaigrette, served on grilled eggplant slices instead of bread.

Ingredients

  • Ground chicken - 300 grams
  • Zucchini - 100 grams, grated
  • Red onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Egg - 1, beaten
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggplant - 1 medium, sliced into 1 cm rounds
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 100 grams, diced
  • Basil leaves - 10 grams, torn
  • Red wine vinegar - 1 tablespoon

Steps

  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine ground chicken, grated zucchini, red onion, minced garlic, beaten egg, oregano, salt, and pepper. Mix until well combined.
  3. Form the mixture into 2 equal patties.
  4. Brush eggplant slices with 1 tablespoon of olive oil and season with salt and pepper. Grill the eggplant for about 3-4 minutes per side, or until tender and grill marks appear. Set aside.
  5. In a separate bowl, combine cherry tomatoes, cucumber, torn basil, red wine vinegar, and the remaining tablespoon of olive oil. Toss to combine and season with salt and pepper to taste.
  6. Grill the chicken patties for about 5-6 minutes per side, or until fully cooked and internal temperature reaches 75°C.
  7. To assemble, place a grilled chicken patty on a grilled eggplant slice, top with the panzanella salad mixture, and finish with another eggplant slice on top.
  8. Serve immediately and enjoy your Panzanella Burger!
