Ingredients

  • Chickpeas - 240 grams (1 can, drained and rinsed)
  • Black olives - 100 grams, pitted and chopped
  • Green olives - 100 grams, pitted and chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Oats - 50 grams, ground into flour
  • Whole wheat burger buns - 2 units
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Red onion - 1/2 small, thinly sliced
  • Lettuce leaves - 2 pieces

Steps

  1. In a mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the chopped black and green olives, minced garlic, chopped parsley, olive oil, lemon juice, cumin, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Gradually add the ground oats to the mixture until it holds together. If too wet, add more oats until the desired consistency is reached.
  4. Divide the mixture into two equal portions and shape each into a patty.
  5. Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Cook the patties for about 5-6 minutes on each side until golden brown and heated through.
  6. While the patties are cooking, prepare the burger buns and toppings. Slice the tomato, cucumber, and red onion.
  7. Assemble the burgers by placing the cooked patty on the bottom half of each bun. Top with lettuce, tomato, cucumber, and red onion slices.
  8. Place the top half of the bun on the assembled burger and serve immediately.
