- Chickpeas - 240 grams (1 can, drained and rinsed)
- Black olives - 100 grams, pitted and chopped
- Green olives - 100 grams, pitted and chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Oats - 50 grams, ground into flour
- Whole wheat burger buns - 2 units
- Tomato - 1 medium, sliced
- Cucumber - 1 small, sliced
- Red onion - 1/2 small, thinly sliced
- Lettuce leaves - 2 pieces
Steps
- In a mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the chopped black and green olives, minced garlic, chopped parsley, olive oil, lemon juice, cumin, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Gradually add the ground oats to the mixture until it holds together. If too wet, add more oats until the desired consistency is reached.
- Divide the mixture into two equal portions and shape each into a patty.
- Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Cook the patties for about 5-6 minutes on each side until golden brown and heated through.
- While the patties are cooking, prepare the burger buns and toppings. Slice the tomato, cucumber, and red onion.
- Assemble the burgers by placing the cooked patty on the bottom half of each bun. Top with lettuce, tomato, cucumber, and red onion slices.
- Place the top half of the bun on the assembled burger and serve immediately.
