Ingredients

  • Riced cauliflower - 300 grams
  • Kalamata olives - 100 grams, pitted and chopped
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 20 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped red onion and minced garlic to the skillet, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the riced cauliflower, and cook for another 5-7 minutes until it becomes tender.
  4. Add the chopped Kalamata olives, halved cherry tomatoes, dried oregano, salt, and black pepper to the skillet, mixing well.

  6. Remove from heat, and stir in the fresh parsley and lemon juice.
