Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 30 ml (plus extra for drizzling)
  • Sea salt - 5 grams
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Kalamata olives - 50 grams, pitted and sliced
  • Fresh spinach - 50 grams
  • Dried oregano - 1 teaspoon
  • Fresh basil leaves - a handful, for garnish

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and sea salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for 15-20 minutes, or until doubled in size.
  5. Preheat your oven to 220°C (430°F).
  6. Once the dough has risen, roll it out on a floured surface to your desired thickness (about 0.5 cm). Transfer it to a baking sheet lined with parchment paper.
  7. Drizzle olive oil over the crust, then layer on the cherry tomatoes, red onion, Kalamata olives, and spinach evenly.
  8. Sprinkle dried oregano over the top and drizzle with a little more olive oil.
  9. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
  10. Remove from the oven, garnish with fresh basil leaves, slice, and serve warm.
