Ingredients
- All-purpose flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 5 grams
- Olive oil - 30 ml (plus extra for drizzling)
- Sea salt - 5 grams
- Cherry tomatoes - 100 grams, halved
- Red onion - 50 grams, thinly sliced
- Kalamata olives - 50 grams, pitted and sliced
- Fresh spinach - 50 grams
- Dried oregano - 1 teaspoon
- Fresh basil leaves - a handful, for garnish
Steps
- In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and sea salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for 15-20 minutes, or until doubled in size.
- Preheat your oven to 220°C (430°F).
- Once the dough has risen, roll it out on a floured surface to your desired thickness (about 0.5 cm). Transfer it to a baking sheet lined with parchment paper.
- Drizzle olive oil over the crust, then layer on the cherry tomatoes, red onion, Kalamata olives, and spinach evenly.
- Sprinkle dried oregano over the top and drizzle with a little more olive oil.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
- Remove from the oven, garnish with fresh basil leaves, slice, and serve warm.
