- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Wash and peel the potatoes, then cut them into wedges or bite-sized pieces.
- In a large mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, salt, and black pepper.
- Add the potato pieces to the bowl and toss until they are well coated with the olive oil mixture.
