Ingredients

  • Chickpeas - 1 cup (cooked)
  • Feta cheese - 100 grams (crumbled)
  • Black olives - 1/2 cup (pitted and chopped)
  • Red onion - 1/4 cup (finely chopped)
  • Garlic - 2 cloves (minced)
  • Fresh parsley - 1/4 cup (chopped)
  • Breadcrumbs - 1/2 cup
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cumin - 1/2 teaspoon
  • Burger buns - 2
  • Tomato - 1 medium (sliced)
  • Cucumber - 1/2 (sliced)
  • Greek yogurt - 1/4 cup
  • Lemon juice - 1 tablespoon

Steps

  1. In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until slightly chunky.
  2. Add the crumbled feta cheese, chopped olives, red onion, minced garlic, parsley, breadcrumbs, egg, salt, pepper, and cumin to the bowl. Mix until combined.
  3. Form the mixture into two equal patties, about 1 inch thick.
  4. Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, mix the Greek yogurt with lemon juice in a small bowl to create a simple sauce.
