- Feta cheese - 100 grams (crumbled)
- Black olives - 1/2 cup (pitted and chopped)
- Red onion - 1/4 cup (finely chopped)
- Garlic - 2 cloves (minced)
- Fresh parsley - 1/4 cup (chopped)
- Breadcrumbs - 1/2 cup
- Egg - 1 large
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cumin - 1/2 teaspoon
- Burger buns - 2
- Tomato - 1 medium (sliced)
- Cucumber - 1/2 (sliced)
- Greek yogurt - 1/4 cup
- Lemon juice - 1 tablespoon
Steps
- In a large mixing bowl, mash the cooked chickpeas with a fork or potato masher until slightly chunky.
- Add the crumbled feta cheese, chopped olives, red onion, minced garlic, parsley, breadcrumbs, egg, salt, pepper, and cumin to the bowl. Mix until combined.
- Form the mixture into two equal patties, about 1 inch thick.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, mix the Greek yogurt with lemon juice in a small bowl to create a simple sauce.
