- Octopus - 500 grams, cleaned and cut into pieces
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Carrots - 1 medium, sliced
- Bay leaves - 2
- Cinnamon stick - 1
- Allspice berries - 5
- Red wine - 100 ml
- Crushed tomatoes - 200 grams
- Vegetable broth - 200 ml
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sautéing until the onion is translucent.
- Add the sliced carrots and cook for another 5 minutes until softened.
- Stir in the octopus pieces and cook for about 5 minutes until they start to change color.
- Add the bay leaves, cinnamon stick, allspice berries, and red wine, allowing it to simmer for 2-3 minutes.
- Pour in the crushed tomatoes and vegetable broth, and season with salt and black pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Let it simmer for about 40 minutes, or until the octopus is tender.
- Remove the bay leaves and cinnamon stick before serving.
- Garnish with fresh parsley and serve hot.
