- Fresh mussels - 500 grams
- Ouzo - 100 ml
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Shallot - 1 medium, finely chopped
- Cherry tomatoes - 200 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the mussels under cold running water, scrubbing the shells to remove any dirt. Discard any mussels that are open and do not close when tapped.
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing for 2-3 minutes until fragrant and translucent.
- Add the halved cherry tomatoes to the pot and cook for another 3-4 minutes, until they start to soften.
- Pour in the ouzo and bring the mixture to a simmer. Allow it to cook for 1-2 minutes to let the alcohol evaporate slightly.
- Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes, or until the mussels have opened up. Discard any mussels that remain closed.
- Remove the pot from heat and stir in the lemon juice, chopped parsley, salt, and pepper to taste.
- Serve the mussels hot, drizzled with the sauce from the pot. Enjoy with crusty bread to soak up the flavorful broth.
