  • Fresh mussels - 500 grams
  • Feta cheese - 100 grams, crumbled
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Black pepper - to taste
  • Salt - to taste

Steps

  1. Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.
  2. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the halved cherry tomatoes to the pot and cook for another 3-4 minutes until they begin to soften.
  4. Add the cleaned mussels to the pot, cover with a lid, and steam for about 5-7 minutes until the mussels have opened up.
  5. Once the mussels are cooked, remove the pot from heat and stir in the crumbled feta cheese, chopped parsley, lemon juice, black pepper, and salt to taste.
  6. Serve the mussels warm, drizzled with extra olive oil if desired, and enjoy!
