  • Dry white wine - 100 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the mussels under cold running water, scrubbing the shells to remove any debris, and remove the beards.
  2. In a large pot, heat the olive oil over medium heat, then add the sliced fennel and sauté for about 5 minutes until it begins to soften.
  3. Add the minced garlic to the pot and sauté for an additional minute until fragrant.
  4. Pour in the dry white wine and bring the mixture to a simmer.
  5. Add the cleaned mussels to the pot, cover with a lid, and cook for about 5-7 minutes, or until the mussels have opened.
  6. Once cooked, remove the pot from heat, and stir in the lemon juice, chopped parsley, salt, and pepper to taste.
  7. Serve the mussels hot, garnished with additional parsley and accompanied by the fennel.
