Ingredients

  • Fresh mussels - 500 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Cherry tomatoes, halved - 200 grams
  • Feta cheese, crumbled - 100 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Oregano, dried - 1 teaspoon
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon wedges - for serving

Steps

  1. Rinse the mussels under cold running water, scrubbing the shells to remove any dirt or debris. Discard any mussels that are open and do not close when tapped.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and red pepper flakes, cooking for an additional 1 minute until fragrant.
  4. Stir in the halved cherry tomatoes, oregano, salt, and black pepper. Cook for about 5 minutes until the tomatoes begin to soften.
  5. Add the cleaned mussels to the pot and cover with a lid. Cook for about 5-7 minutes until the mussels open up, shaking the pot occasionally.
  6. Once the mussels have opened, remove the lid and sprinkle the crumbled feta cheese and chopped parsley over the top. Cook for an additional 2 minutes until the cheese is slightly melted.
  7. Serve the Mussels Saganaki hot, garnished with extra parsley and lemon wedges on the side.
