Ingredients

  • Portobello mushrooms - 2 large
  • Fresh spinach - 100 grams
  • Garlic - 2 cloves, minced
  • Red onion - 1 small, finely chopped
  • Chickpeas - 200 grams, drained and rinsed
  • Quinoa - 50 grams, cooked
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain burger buns - 2
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Olives - 50 grams, pitted and sliced

Steps

  1. Preheat your grill or skillet over medium heat.
  2. In a large bowl, combine the chickpeas, cooked quinoa, garlic, red onion, parsley, cumin, salt, and pepper. Mash the mixture until well combined but still slightly chunky.
  3. Stir in the fresh spinach and half of the olive oil until evenly distributed.
  4. Form the mixture into two patties, about 1.5 cm thick.
  5. Brush the portobello mushrooms with the remaining olive oil and place them on the grill, gill side down. Grill for about 5-7 minutes, then flip and grill for another 5 minutes, until tender.
  6. Cook the quinoa patties on the grill or skillet for about 4-5 minutes on each side until golden brown.
  7. To assemble the burgers, place the quinoa patty on the bottom half of the whole grain bun, add grilled portobello, slices of tomato, cucumber, and olives. Drizzle with lemon juice if desired.
  8. Top with the other half of the bun, serve immediately, and enjoy your Mushroom Spinach Burger!
