- Portobello mushrooms - 200 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat pita bread - 2 pieces
- Cucumber - 1/2, grated
- Almond yogurt (or any plant-based yogurt) - 150 grams
- Fresh dill - 1 tablespoon, chopped
- Red onion - 1/4, thinly sliced
- Tomato - 1, sliced
- Fresh parsley - 1 tablespoon, chopped
Steps
- In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the marinade.
- Slice the portobello mushrooms into thick strips and add them to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
- While the mushrooms are marinating, prepare the tzatziki sauce by mixing the grated cucumber with almond yogurt, chopped dill, and a pinch of salt. Set aside.
- Preheat a grill or grill pan over medium heat. Once hot, add the marinated mushrooms and grill for about 5-7 minutes on each side until tender and slightly charred.
- Warm the pita bread on the grill for about 1 minute on each side until soft.
- To assemble, place the grilled mushrooms in the warm pita, top with sliced tomatoes, red onion, and fresh parsley. Drizzle with tzatziki sauce.
