Ingredients

  • Portobello mushrooms - 200 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat pita bread - 2 pieces
  • Cucumber - 1/2, grated
  • Almond yogurt (or any plant-based yogurt) - 150 grams
  • Fresh dill - 1 tablespoon, chopped
  • Red onion - 1/4, thinly sliced
  • Tomato - 1, sliced
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the marinade.
  2. Slice the portobello mushrooms into thick strips and add them to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  3. While the mushrooms are marinating, prepare the tzatziki sauce by mixing the grated cucumber with almond yogurt, chopped dill, and a pinch of salt. Set aside.
  4. Preheat a grill or grill pan over medium heat. Once hot, add the marinated mushrooms and grill for about 5-7 minutes on each side until tender and slightly charred.
  5. Warm the pita bread on the grill for about 1 minute on each side until soft.
  6. To assemble, place the grilled mushrooms in the warm pita, top with sliced tomatoes, red onion, and fresh parsley. Drizzle with tzatziki sauce.
