Ingredients

  • Whole wheat pita bread - 2 pieces
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Mushrooms (button or cremini) - 200 grams, sliced
  • Red onion - 1 small, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Spinach - 50 grams, fresh
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and add the minced garlic. Sauté for 1 minute until fragrant.
  3. Add the sliced mushrooms and red onion to the skillet, cooking for about 5-7 minutes until the mushrooms are tender and the onions are translucent.
  4. Stir in the cherry tomatoes, spinach, dried oregano, salt, and black pepper. Cook for an additional 3-4 minutes until the spinach is wilted.
  5. Remove the skillet from heat and mix in the chopped parsley and lemon juice.
  6. Place the pita breads on a baking sheet and drizzle with the remaining tablespoon of olive oil.
  7. Divide the mushroom mixture evenly between the two pita breads, spreading it out to cover the surface.
  8. Bake in the preheated oven for 10-12 minutes until the pitas are crisp and lightly browned.
  9. Remove from the oven, let cool for a minute, and slice into quarters before serving.
