Ingredients

  • Basmati rice - 150 grams
  • Mushrooms (button or cremini) - 200 grams, sliced
  • Vegetable broth - 400 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat and add the chopped onion, sautéing until translucent (about 5 minutes).
  3. Add the minced garlic and sliced mushrooms to the pan, cooking for another 5-7 minutes until the mushrooms are soft and any released liquid has evaporated.
  4. Stir in the dried oregano, salt, and black pepper, followed by the drained rice, mixing well to combine all ingredients.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15-20 minutes or until the rice is cooked and has absorbed all the liquid.
  6. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the pilaf with a fork and stir in the chopped parsley before serving.
