- Basmati rice - 150 grams
- Mushrooms (button or cremini) - 200 grams, sliced
- Vegetable broth - 400 ml
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat and add the chopped onion, sautéing until translucent (about 5 minutes).
- Add the minced garlic and sliced mushrooms to the pan, cooking for another 5-7 minutes until the mushrooms are soft and any released liquid has evaporated.
- Stir in the dried oregano, salt, and black pepper, followed by the drained rice, mixing well to combine all ingredients.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15-20 minutes or until the rice is cooked and has absorbed all the liquid.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the pilaf with a fork and stir in the chopped parsley before serving.
