- Whole wheat pita bread - 2 pieces
- Cucumber - 1/2, sliced
- Tomato - 1 medium, diced
- Red onion - 1/4, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Tahini - 2 tablespoons
- Water - 1 tablespoon (for tahini sauce)
- Smoked paprika - 1/2 teaspoon
Steps
- In a bowl, mix the olive oil, minced garlic, lemon juice, dried oregano, salt, black pepper, and smoked paprika to create a marinade.
- Slice the portobello mushrooms into thick strips and add them to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
- While the mushrooms are marinating, prepare the tahini sauce by combining tahini and water in a small bowl. Stir until smooth and set aside.
- Preheat a grill or grill pan over medium-high heat. Grill the marinated mushrooms for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
- Warm the pita bread on the grill for about 1-2 minutes on each side until slightly toasted.
- To assemble the gyros, place a generous amount of grilled mushrooms in the center of each pita. Top with cucumber slices, diced tomato, red onion, and chopped parsley.
