Ingredients

  • Portobello mushrooms - 200 grams

  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat pita bread - 2 pieces
  • Cucumber - 1/2, sliced
  • Tomato - 1 medium, diced
  • Red onion - 1/4, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Tahini - 2 tablespoons
  • Water - 1 tablespoon (for tahini sauce)
  • Smoked paprika - 1/2 teaspoon

Steps

  1. In a bowl, mix the olive oil, minced garlic, lemon juice, dried oregano, salt, black pepper, and smoked paprika to create a marinade.
  2. Slice the portobello mushrooms into thick strips and add them to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  3. While the mushrooms are marinating, prepare the tahini sauce by combining tahini and water in a small bowl. Stir until smooth and set aside.
  4. Preheat a grill or grill pan over medium-high heat. Grill the marinated mushrooms for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
  5. Warm the pita bread on the grill for about 1-2 minutes on each side until slightly toasted.
  6. To assemble the gyros, place a generous amount of grilled mushrooms in the center of each pita. Top with cucumber slices, diced tomato, red onion, and chopped parsley.
