  • Whole wheat pizza dough - 250 grams

  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 tablespoon, chopped
  • Feta cheese - 100 grams, crumbled
  • Cherry tomatoes - 100 grams, halved
  • Spinach - 50 grams, fresh
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. On a floured surface, roll out the whole wheat pizza dough into a 12-inch round.
  3. Transfer the rolled-out dough to a baking sheet lined with parchment paper.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until they are golden brown.
  5. Add minced garlic and chopped thyme to the mushrooms and cook for an additional 2 minutes, stirring frequently. Season with salt and black pepper to taste.
  6. Spread the sautéed mushrooms evenly over the pizza dough.
  7. Sprinkle the crumbled feta cheese over the mushrooms.
  8. Distribute the halved cherry tomatoes and fresh spinach evenly on top.
  9. Drizzle the remaining tablespoon of olive oil over the pizza.
  10. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is slightly melted.
  11. Remove from the oven, let it cool for a couple of minutes, slice, and serve warm.
