Ingredients

  • Almond flour - 150 grams
  • Cauliflower rice - 100 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 tablespoon, chopped
  • Mushrooms (button or cremini) - 150 grams, sliced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons (optional for cheesy flavor)

Steps

  1. Preheat the oven to 220°C (428°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the almond flour, cauliflower rice, egg, olive oil, salt, and pepper. Mix until a dough forms.
  3. Transfer the dough onto the prepared baking tray and press it into a flat, round shape about 1/2 inch thick.
  4. Bake the crust in the preheated oven for 10-12 minutes, or until golden brown.
  5. While the crust is baking, heat a tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  6. Add the sliced mushrooms and thyme to the skillet. Sauté for about 5-7 minutes until the mushrooms are tender and any moisture has evaporated. Season with salt and pepper to taste.
  7. Remove the crust from the oven and evenly spread the mushroom mixture over the top.

  9. Return the flatbread to the oven and bake for an additional 5-7 minutes until heated through.
