- Almond flour - 150 grams
- Cauliflower rice - 100 grams
- Egg - 1 large
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh thyme - 1 tablespoon, chopped
- Mushrooms (button or cremini) - 150 grams, sliced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutritional yeast - 2 tablespoons (optional for cheesy flavor)
Steps
- Preheat the oven to 220°C (428°F) and line a baking tray with parchment paper.
- In a mixing bowl, combine the almond flour, cauliflower rice, egg, olive oil, salt, and pepper. Mix until a dough forms.
- Transfer the dough onto the prepared baking tray and press it into a flat, round shape about 1/2 inch thick.
- Bake the crust in the preheated oven for 10-12 minutes, or until golden brown.
- While the crust is baking, heat a tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the sliced mushrooms and thyme to the skillet. Sauté for about 5-7 minutes until the mushrooms are tender and any moisture has evaporated. Season with salt and pepper to taste.
- Remove the crust from the oven and evenly spread the mushroom mixture over the top.
- If using, sprinkle nutritional yeast over the mushrooms for added flavor.
- Return the flatbread to the oven and bake for an additional 5-7 minutes until heated through.
- Remove from the oven, slice, and serve warm.
