Ingredients

  • Whole wheat pizza dough - 250 grams
  • Eggplant - 1 medium, sliced
  • Ground turkey - 200 grams
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Greek yogurt - 100 grams
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Parmesan cheese - 30 grams, grated
  • Mozzarella cheese - 100 grams, shredded
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a floured surface to your desired thickness and shape. Transfer it to a baking sheet or pizza stone.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and minced garlic, sautéing until translucent.
  4. Add the ground turkey to the skillet, cooking until browned. Stir in the tomato paste, cinnamon, oregano, salt, and pepper. Cook for another 5 minutes, then remove from heat.
  5. In a separate pan, heat the remaining tablespoon of olive oil and sauté the sliced eggplant until softened and lightly browned, about 5-7 minutes. Set aside.
  6. In a bowl, mix the Greek yogurt and egg until smooth. Stir in half of the grated Parmesan cheese and set aside.
  7. Spread the turkey mixture evenly over the pizza dough, followed by the sautéed eggplant slices.
  8. Pour the yogurt mixture over the top, spreading it evenly. Sprinkle the shredded mozzarella cheese and remaining Parmesan on top.
  9. Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and golden.
  10. Remove from the oven, let it cool slightly, and garnish with fresh parsley before slicing.
