- Whole wheat pizza dough - 250 grams
- Eggplant - 1 medium, sliced
- Ground turkey - 200 grams
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Cinnamon - 1/2 teaspoon
- Oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Greek yogurt - 100 grams
- Egg - 1 large
- Olive oil - 2 tablespoons
- Parmesan cheese - 30 grams, grated
- Mozzarella cheese - 100 grams, shredded
- Fresh parsley - for garnish
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness and shape. Transfer it to a baking sheet or pizza stone.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and minced garlic, sautéing until translucent.
- Add the ground turkey to the skillet, cooking until browned. Stir in the tomato paste, cinnamon, oregano, salt, and pepper. Cook for another 5 minutes, then remove from heat.
- In a separate pan, heat the remaining tablespoon of olive oil and sauté the sliced eggplant until softened and lightly browned, about 5-7 minutes. Set aside.
- In a bowl, mix the Greek yogurt and egg until smooth. Stir in half of the grated Parmesan cheese and set aside.
- Spread the turkey mixture evenly over the pizza dough, followed by the sautéed eggplant slices.
- Pour the yogurt mixture over the top, spreading it evenly. Sprinkle the shredded mozzarella cheese and remaining Parmesan on top.
- Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, let it cool slightly, and garnish with fresh parsley before slicing.
