Ingredients
- Eggs - 4 large
- Ground lamb or beef - 200 grams
- Eggplant - 1 small, diced
- Red onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Olive oil - 2 tablespoons
- Feta cheese - 50 grams, crumbled
- Dried oregano - 1 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped red onion and minced garlic, sautéing until softened, about 3-4 minutes.
- Add the diced eggplant to the skillet and cook for another 5-7 minutes, until the eggplant is tender and slightly browned.
- Stir in the ground lamb or beef, cooking until browned and fully cooked, about 5-6 minutes. Add the diced tomato, oregano, cinnamon, salt, and pepper, cooking for an additional 2-3 minutes until combined. Remove from heat.
- In a mixing bowl, whisk the eggs until well combined. Stir in the cooked meat and eggplant mixture, followed by the crumbled feta cheese.
- Wipe the skillet clean and add the remaining tablespoon of olive oil. Pour the egg mixture back into the skillet and cook on the stovetop for 2-3 minutes until the edges begin to set.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is puffed and set in the center.
- Remove from the oven and let it cool for a few minutes. Slice into wedges, garnish with fresh parsley, and serve warm.
