Ingredients

  • Eggplant - 1 medium, sliced
  • Ground beef or lamb - 250 grams
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Tomato paste - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 2 large
  • Heavy cream - 100 ml
  • Grated Parmesan cheese - 50 grams
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out moisture.
  3. In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent.
  4. Add the ground meat to the skillet and cook until browned. Stir in the tomato paste, oregano, cinnamon, salt, and pepper. Simmer for 10 minutes, then set aside.
  5. Rinse the eggplant slices and pat them dry. In a separate skillet, lightly sauté the eggplant slices in olive oil until golden on both sides, about 3-4 minutes per side.
  6. In a bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese until well combined.
  7. In a greased baking dish, layer half of the sautéed eggplant, followed by the meat mixture, and then the remaining eggplant. Pour the egg and cheese mixture evenly on top.
  8. Bake in the preheated oven for 30 minutes, or until the top is golden and set.
  9. Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped parsley.
