- Eggplant - 1 medium, sliced
- Ground beef or lamb - 250 grams
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Tomato paste - 2 tablespoons
- Dried oregano - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Eggs - 2 large
- Heavy cream - 100 ml
- Grated Parmesan cheese - 50 grams
- Fresh parsley - 1 tablespoon, chopped
Steps
- Preheat your oven to 180°C (350°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out moisture.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent.
- Add the ground meat to the skillet and cook until browned. Stir in the tomato paste, oregano, cinnamon, salt, and pepper. Simmer for 10 minutes, then set aside.
- Rinse the eggplant slices and pat them dry. In a separate skillet, lightly sauté the eggplant slices in olive oil until golden on both sides, about 3-4 minutes per side.
- In a bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese until well combined.
- In a greased baking dish, layer half of the sautéed eggplant, followed by the meat mixture, and then the remaining eggplant. Pour the egg and cheese mixture evenly on top.
- Bake in the preheated oven for 30 minutes, or until the top is golden and set.
- Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped parsley.
