Ingredients

  • 500g ground lean lamb or beef
  • 1 medium eggplant, sliced into 1 cm rounds
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cinnamon
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 whole wheat burger buns
  • 100g Greek yogurt
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into rounds, sprinkle with salt, and let sit for 15 minutes to draw out moisture.
  3. Rinse the eggplant and pat dry. Brush both sides with olive oil and place them on a baking sheet.
  4. Bake the eggplant in the preheated oven for about 20 minutes, flipping halfway through, until golden and tender.
  5. In a skillet over medium heat, add a little olive oil and sauté the onion and garlic until soft.
  6. In a bowl, combine the ground meat, sautéed onion and garlic, cinnamon, oregano, salt, and pepper. Form into 2 burger patties.
  7. In the same skillet, cook the patties over medium-high heat for about 5-7 minutes on each side, or until cooked through.
  8. To assemble the burgers, place a patty on each whole wheat bun, top with baked eggplant, and a dollop of Greek yogurt.
  9. Garnish with fresh parsley and serve immediately.
