Ingredients
- 500g ground lean lamb or beef
- 1 medium eggplant, sliced into 1 cm rounds
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cinnamon
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 whole wheat burger buns
- 100g Greek yogurt
- 1 tbsp olive oil
- 1 tbsp fresh parsley, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into rounds, sprinkle with salt, and let sit for 15 minutes to draw out moisture.
- Rinse the eggplant and pat dry. Brush both sides with olive oil and place them on a baking sheet.
- Bake the eggplant in the preheated oven for about 20 minutes, flipping halfway through, until golden and tender.
- In a skillet over medium heat, add a little olive oil and sauté the onion and garlic until soft.
- In a bowl, combine the ground meat, sautéed onion and garlic, cinnamon, oregano, salt, and pepper. Form into 2 burger patties.
- In the same skillet, cook the patties over medium-high heat for about 5-7 minutes on each side, or until cooked through.
- To assemble the burgers, place a patty on each whole wheat bun, top with baked eggplant, and a dollop of Greek yogurt.
- Garnish with fresh parsley and serve immediately.
