Ingredients
- Eggplant - 1 medium, sliced into 0.5 cm rounds
- Ground turkey - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Diced tomatoes - 200 grams (canned or fresh)
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Eggs - 4 large
- Greek yogurt - 100 grams
- Feta cheese - 50 grams, crumbled
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Sprinkle the sliced eggplant with salt and let it sit for 15 minutes to draw out moisture. Rinse and pat dry.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and ground turkey to the skillet, cooking until the turkey is browned and cooked through, about 5-7 minutes.
- Stir in the diced tomatoes, oregano, salt, and black pepper. Simmer for 5 minutes, then remove from heat.
- In a separate bowl, whisk together the eggs and Greek yogurt until smooth.
- In a greased baking dish, layer half of the eggplant slices on the bottom. Spread half of the turkey mixture over the eggplant. Repeat with the remaining eggplant and turkey.
- Pour the egg and yogurt mixture evenly over the layered dish. Sprinkle crumbled feta cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the egg is set and the top is lightly golden.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
