Ingredients

  • Eggplant - 1 medium, sliced into 0.5 cm rounds
  • Ground turkey - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Diced tomatoes - 200 grams (canned or fresh)
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 4 large
  • Greek yogurt - 100 grams
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Sprinkle the sliced eggplant with salt and let it sit for 15 minutes to draw out moisture. Rinse and pat dry.
  3. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  4. Add the minced garlic and ground turkey to the skillet, cooking until the turkey is browned and cooked through, about 5-7 minutes.
  5. Stir in the diced tomatoes, oregano, salt, and black pepper. Simmer for 5 minutes, then remove from heat.
  6. In a separate bowl, whisk together the eggs and Greek yogurt until smooth.
  7. In a greased baking dish, layer half of the eggplant slices on the bottom. Spread half of the turkey mixture over the eggplant. Repeat with the remaining eggplant and turkey.
  8. Pour the egg and yogurt mixture evenly over the layered dish. Sprinkle crumbled feta cheese on top.
  9. Bake in the preheated oven for 25-30 minutes, or until the egg is set and the top is lightly golden.
  10. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
