- Eggplant - 1 medium
- Zucchini - 1 medium
- Ground turkey or lean beef - 200 grams
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Olive oil - 2 tablespoons
- Oregano - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Greek yogurt - 100 grams
- Egg - 1 large
- Feta cheese - 50 grams, crumbled
- Parsley - 1 tablespoon, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant and zucchini into 1 cm thick rounds, sprinkle with salt, and let sit for 10 minutes to draw out moisture. Rinse and pat dry.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent.
- Add the ground turkey (or beef) to the skillet, cooking until browned. Stir in the diced tomato, oregano, cinnamon, salt, and pepper. Cook for an additional 5 minutes before removing from heat.
- In a separate pan, heat the remaining tablespoon of olive oil and sauté the eggplant and zucchini slices until golden brown on both sides, about 3-4 minutes per side.
- In a bowl, whisk together the Greek yogurt and egg until smooth. Stir in the crumbled feta cheese.
- In a baking dish, layer half of the sautéed vegetables at the bottom, followed by all of the meat mixture, and then the remaining vegetables on top.
- Pour the yogurt and feta mixture over the layered vegetables and meat, spreading it evenly.
- Bake in the preheated oven for 25 minutes, or until the top is golden brown and set.
- Remove from the oven, let cool for a few minutes, then sprinkle with chopped parsley before serving.
