Ingredients

  • Eggplant - 1 medium
  • Zucchini - 1 medium
  • Ground turkey or lean beef - 200 grams
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Oregano - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Greek yogurt - 100 grams
  • Egg - 1 large
  • Feta cheese - 50 grams, crumbled
  • Parsley - 1 tablespoon, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant and zucchini into 1 cm thick rounds, sprinkle with salt, and let sit for 10 minutes to draw out moisture. Rinse and pat dry.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent.
  4. Add the ground turkey (or beef) to the skillet, cooking until browned. Stir in the diced tomato, oregano, cinnamon, salt, and pepper. Cook for an additional 5 minutes before removing from heat.
  5. In a separate pan, heat the remaining tablespoon of olive oil and sauté the eggplant and zucchini slices until golden brown on both sides, about 3-4 minutes per side.
  6. In a bowl, whisk together the Greek yogurt and egg until smooth. Stir in the crumbled feta cheese.
  7. In a baking dish, layer half of the sautéed vegetables at the bottom, followed by all of the meat mixture, and then the remaining vegetables on top.
  8. Pour the yogurt and feta mixture over the layered vegetables and meat, spreading it evenly.
  9. Bake in the preheated oven for 25 minutes, or until the top is golden brown and set.
  10. Remove from the oven, let cool for a few minutes, then sprinkle with chopped parsley before serving.
