Ingredients
- Eggplant - 1 medium-sized, sliced into 1 cm rounds
- Ground beef or lamb - 250 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Dried oregano - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Egg - 1 large
- Greek yogurt - 100 grams
- Parmesan cheese - 30 grams, grated
Steps
- Preheat your oven to 200°C (400°F).
- Sprinkle the eggplant slices with salt and let them sit for about 15 minutes to draw out moisture. Rinse and pat dry.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent.
- Add the ground beef or lamb to the skillet, cooking until browned and cooked through. Stir in the tomato paste, oregano, cinnamon, salt, and black pepper. Remove from heat.
- In another skillet, heat the remaining olive oil over medium-high heat. Sauté the eggplant slices for about 2-3 minutes on each side until lightly browned. Remove and set aside.
- In a bowl, mix the Greek yogurt, egg, and half of the grated Parmesan cheese until well combined.
- To assemble the moussaka bites, place a layer of sautéed eggplant at the bottom of a baking dish, then add a layer of the meat mixture, followed by another layer of eggplant. Repeat until all ingredients are used, finishing with the yogurt mixture on top.
- Sprinkle the remaining Parmesan cheese on top and bake in the preheated oven for 20-25 minutes, until golden and bubbly.
- Allow to cool for a few minutes before cutting into bite-sized pieces and serving.
