Ingredients

  • Eggplant - 1 medium-sized, sliced into 1 cm rounds
  • Ground beef or lamb - 250 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Egg - 1 large
  • Greek yogurt - 100 grams
  • Parmesan cheese - 30 grams, grated

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Sprinkle the eggplant slices with salt and let them sit for about 15 minutes to draw out moisture. Rinse and pat dry.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent.
  4. Add the ground beef or lamb to the skillet, cooking until browned and cooked through. Stir in the tomato paste, oregano, cinnamon, salt, and black pepper. Remove from heat.
  5. In another skillet, heat the remaining olive oil over medium-high heat. Sauté the eggplant slices for about 2-3 minutes on each side until lightly browned. Remove and set aside.
  6. In a bowl, mix the Greek yogurt, egg, and half of the grated Parmesan cheese until well combined.
  7. To assemble the moussaka bites, place a layer of sautéed eggplant at the bottom of a baking dish, then add a layer of the meat mixture, followed by another layer of eggplant. Repeat until all ingredients are used, finishing with the yogurt mixture on top.
  8. Sprinkle the remaining Parmesan cheese on top and bake in the preheated oven for 20-25 minutes, until golden and bubbly.
  9. Allow to cool for a few minutes before cutting into bite-sized pieces and serving.
