Ingredients
- Eggplant - 1 medium (about 300g)
- Olive oil - 3 tablespoons
- Ground beef - 250g
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Cinnamon - 1/2 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Heavy cream - 150ml
- Egg - 1 large
- Grated Parmesan cheese - 50g
- Feta cheese - 50g, crumbled
Steps
- Preheat your BBQ grill to medium heat.
- Slice the eggplant into 1/2 cm thick rounds, sprinkle with salt, and let them sit for 15 minutes to draw out moisture.
- Rinse the eggplant slices and pat them dry. Brush both sides with olive oil and grill them for about 2-3 minutes per side until tender. Remove and set aside.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula. Stir in the tomato paste, cinnamon, oregano, salt, and pepper, and cook for another 5 minutes. Remove from heat.
- In a bowl, whisk together the heavy cream, egg, and grated Parmesan cheese until well combined.
- In a baking dish, layer half of the grilled eggplant slices at the bottom. Spread half of the meat mixture over the eggplant, followed by another layer of eggplant. Pour the cream mixture evenly over the top and sprinkle with crumbled feta cheese.
- Cover the dish with foil and bake on the grill for 30 minutes. Remove the foil and bake for an additional 10 minutes until the top is golden.
- Let it cool for a few minutes before serving.
