Ingredients

  • Eggs - 4 large
  • Mizithra cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a mixing bowl, crack the eggs and whisk them until well combined. Season with salt and black pepper.
  2. Heat the olive oil in a non-stick skillet over medium heat.
  3. Pour the whisked eggs into the skillet, tilting the pan to spread them evenly.
  4. As the eggs begin to set, gently lift the edges with a spatula, allowing the uncooked eggs to flow to the edges.
  5. Once the eggs are mostly set but still slightly runny on top, sprinkle the crumbled Mizithra cheese, chopped parsley, and dill over one half of the omelette.
  6. Carefully fold the other half of the omelette over the filling and cook for another 1-2 minutes until the cheese is slightly melted and the eggs are cooked through.
  7. Slide the omelette onto a plate and serve immediately, garnished with additional herbs if desired.
