  • Mizithra cheese - 200 grams
  • Olive oil - 2 tablespoons
  • Eggs - 4 large
  • Fresh spinach - 100 grams
  • Cherry tomatoes - 100 grams
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - for garnish

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the fresh spinach to the skillet and sauté for 2-3 minutes until wilted.
  3. While the spinach is cooking, crack the eggs into a bowl, season with salt and black pepper, and whisk until combined.
  4. Push the spinach to one side of the skillet and pour the eggs into the empty side, cooking for about 3-4 minutes until they are set but still slightly runny.
  5. Add the Mizithra cheese on top of the eggs and spinach, allowing it to melt slightly.
  6. Halve the cherry tomatoes and add them to the skillet, cooking for an additional 2 minutes.
  7. Drizzle the remaining tablespoon of olive oil over the dish and garnish with fresh basil before serving.
