Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1, diced
  • Green beans - 100 grams, trimmed and cut into 2 cm pieces
  • Kale or spinach - 100 grams, chopped
  • Canned diced tomatoes - 400 grams
  • Vegetable broth - 500 ml
  • Oregano - 1 teaspoon
  • Dill - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Chickpeas - 240 grams, canned and drained
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and garlic, sautéing for 3-4 minutes until translucent.
  3. Stir in the carrot, celery, zucchini, and red bell pepper, cooking for another 5 minutes.
  4. Add the green beans, canned diced tomatoes, vegetable broth, oregano, and dill. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes, or until the vegetables are tender.
  6. Stir in the kale or spinach and chickpeas, cooking for an additional 5 minutes.
  7. Season with salt, black pepper, and lemon juice to taste.
  8. Serve hot, garnished with fresh parsley.
