- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1, diced
- Green beans - 100 grams, trimmed and cut into 2 cm pieces
- Kale or spinach - 100 grams, chopped
- Canned diced tomatoes - 400 grams
- Vegetable broth - 500 ml
- Oregano - 1 teaspoon
- Dill - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
- Chickpeas - 240 grams, canned and drained
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and garlic, sautéing for 3-4 minutes until translucent.
- Stir in the carrot, celery, zucchini, and red bell pepper, cooking for another 5 minutes.
- Add the green beans, canned diced tomatoes, vegetable broth, oregano, and dill. Bring to a boil.
- Reduce heat and simmer for 15 minutes, or until the vegetables are tender.
- Stir in the kale or spinach and chickpeas, cooking for an additional 5 minutes.
- Season with salt, black pepper, and lemon juice to taste.
- Serve hot, garnished with fresh parsley.
