  • Dried seaweed (wakame) - 20 grams
  • Cucumber - 1 medium, thinly sliced
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 1/4 medium, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Apple cider vinegar - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Capers - 1 tablespoon, rinsed and drained

Steps

  1. Soak the dried seaweed in warm water for about 10 minutes until it rehydrates and expands, then drain and chop into bite-sized pieces.
  2. In a large bowl, combine the sliced cucumber, halved cherry tomatoes, and thinly sliced red onion.
  3. Add the rehydrated seaweed and chopped parsley to the vegetable mixture.
  4. In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, salt, and black pepper to create the dressing.
  5. Pour the dressing over the salad and mix gently until all ingredients are well coated.
